The categories are in different units — a caterer advertises a per-head cover, a photographer a whole engagement, a car hire firm a day — so the sum has no dimension. Each figure rests on a different sample of different businesses, none of whom have ever worked together. And a sum of medians is not the median of sums: half the couples are below the median on one line and above it on the next, so the arithmetic does not describe anybody.

A total for a real wedding needs a date, a guest count and a property. Compose one and every line carries the basis it came from, including the lines where we say we hold no figure.
